Tofu is very common in Asian Cuisine. The Asian kitchen gets very creative when it comes to using tofu, making recipes ranging anywhere from Mapo tofu to tofu poke bowls. The last one is exactly the one that we’ll be addressing in this recipe. We came up with our own easy tofu poke bowl recipe. While super healthy and delicious, the recipe is super easy to make and requires almost no preparation or cooking time, since almost all ingredients are fresh and uncooked. The only downside is that you will need a lot of different ingredients. However, we’ve selected a wide range of ingredients that we prefer for a tofu poke bowl. You aren’t obliged to exactly copy these ingredients. You could choose to make your life easier by incorporating fewer ingredients and increasing the amount of other ingredients. You have all freedom when it comes to the exact composition of this delicious tofu meal. The only thing that is a must in this recipe is some myTofu. We used the Chinese myTofu So let’s get creative and make a delicious myTofu poke bowl.
How to build your tofu poke bowl?
- Start by cooking some sushi rice. Read our blog on how to cook rice for you all of your tofu dishes to learn the best practice when cooking your rice.
- At the same time your rice is cooking, it’s time to cut your myTofu. Cut your myTofu into small blocks and cook it in a pan on medium-high heat until all sides are golden brown. Make sure to put some olive oil in the pan before cooking. If your tofu is ready, temporarily place it in a bowl.
- While your rice and tofu are still cooking, You can already start to prepare your vegetables. Cut the cucumber and avocado into small slices and get your soybeans and corn ready. You could easily use the ready-to-use small cans from the supermarket for this. We also used seaweed. This can usually be bought at your local supermarket in small packages.
- When all the ingredients are ready, it’s time to build your poke bowl. We started with a layer of sushi rice. On top of the sushi rice, we placed the other ingredients starting with avocado, followed by seaweed, Chinese myTofu, corn, cucumber, and lastly soy beans layered from top to bottom. We topped it with some wasabi mayo, but you can use any sauce you’d like, you have all the freedom when it comes to building your own Poke bowl.
Ingredients:
- 50-100 grams of corn
- 50-100 grams of soybeans
- 50-100 grams of cucumber
- 50-100 grams of seaweed
- Halve an Avocado
- 200 grams myTofu, any flavor works, but we prefer to use the Chinese myTofu
- 100 grams of sticky rice, sushi rice works best here.
- Sauce, for example, sweet chili sauce or sambal. We used some wasabi mayonnaise.
