Curry and coconut milk are widely known as one of the best combinations for a tasty meal! You know what’s even better? Adding myTofu curry to it! This recipe results in an easy, but delicious meal. The recipe is normally made for two people, but feel free to adjust the values of the ingredients to your preference! You can even opt to use different vegetables if they suit your preference(s) more! There are no rules in the myTofu kitchen.
Ingredients:
Base ingredients:
- 250 grams of mushrooms
- 3 bell peppers
- 2-3 white onions
- Halve a bouquet of spring onion
- 400ml of coconut milk
- 300 grams of Curry myTofu
- 160 grams of uncooked white rice
Ingredients for seasoning round 1:
- 2 teaspoons of salt
- 3 garlic gloves
- 3 teaspoons of curry
- 1 teaspoon of Cuman
- 2 teaspoons of garam Massala
- 1 teaspoon of smoked paprika
Ingredients for seasoning round 2:
- 3 teaspoons of curry
- 1 teaspoon of smoked paprika
- 1 teaspoon garam Masala
- 1 teaspoon of garlic powder
- Optional: 1 teaspoon of sambal
Steps:
- Cut your onions and garlic
- Cut your vegetables
- Cut your myTofu curry into small blocks
- Cook your onions and garlic (add some oil or butter in the pan before cooking)
- Add your veggies to your onions and garlic
- Add your spices for round 1 of seasoning to your onions, garlic, and vegetables
- Cook your tofu in a separate pan until all sides are golden brown and temporarily place it aside (add some oil or butter in the pan before cooking)
- Add your coconut milk to your veggies and onions and bring the complete sauce to a simmer.
- Now, you’ve added coconut milk, your sauce is almost ready! Just add the spices for round 2 of seasoning and you’re done!
