Ingredients:
- 2 tablespoons of ginger (finely chopped)
- 3 cloves of garlic (finely chopped)
- 1-2 tablespoons of soy sauce
- 1 white onion
- 200 grams of Chinese myTofu
- 2 spring onions
- 1 vegetable stock cube
- 1 liter of water
- 70 grams of vermicelli noodles
- 250 grams of mushrooms
- 1 pak choi
- 1 teaspoon sesame oil
- 2 tablespoons of olive oil
- 1 teaspoon sambal oelek, or other spicy ingredient
How to prepare the Tofu noodle soup?
- Cut the onion into small pieces and the ginger and garlic into very fine pieces.
- Heat a tablespoon of olive oil in a pan over medium-high heat.
- Fry the onion along with the ginger and garlic.
- Prepare a vegetable stock separately by dissolving one bouillon cube in 1 liter of boiling water.
- Clean the mushrooms and cut the pak choi. Cut the mushrooms into small pieces and remove the stems of the pak choi, leaving only the leaves. Add the mushrooms and pak choi to the garlic, ginger and onion, and cook until the pak choi and mushrooms are nice and soft.
- Add a teaspoon of sambal oelek to your vegetables and onions.
