Vegan scrambled eggs with myTofu Curry

While some people might enjoy a cold breakfast like a basic cereal or yoghurt as their, some people like to put in some work and often prepare a warm meal as their breakfast. These breakfasts normally include some kind of meat, like sausages or some form of eggs, like scrambled eggs. We’ve created a warm vegan breakfast with our myTofu curry flavour. We will cut and scramble the tofu to a scrambled egg like texture, served with caramelized onions and mushrooms. Don’t worry. Your breakfast won’t become a spicey attack on your taste buds. We’ve made sure to restrict spiciness and saltiness. This recipe contains the amount of ingredients for one person and is normally served with toast, but as always everything in our recipe is adjustable to your preference(s). Enjoy and make sure to impress your family and friends with this amazing recipe. 

Vegan scrambled eggs with myTofu Curry

ingredients:

  • 200 grams of myTofu Curry
  • 2-4 slices toast bread (white or brown)
  • 1 red/white onion
  • 200 grams of mushrooms 
  • Pepper
  • Salt
  • 1 tbsp of olive oil
  • 1 tsp honey
  • 1 tsp curcumin
  • 2 tsp curry powder

How to prepare? 

  1. Cut your onions into small pieces
  2. Cut your myTofu curry into small blocks and scramble it.
  3. Cut your mushrooms into small pieces
  4. Add a tablespoon of olive oil to a pan and cook your onions on medium-high heat
  5. Once slightly caramelized, add one tablespoon of honey to your onions.
  6. Add your mushrooms to your onions and cook them until most of the water from the mushrooms has been evaporated.
  7. Add your tofu to the pan and make sure to stir frequently.
  8. Get a bread toaster or another pan and make sure to toast your slices of bread. 
  9. Place a slice of bread on a plate and top it off with your caramelized onions, mushrooms, scrambled tofu, and enjoy!
